This is another of my family's favorites, its a recipe that I got from Dean's mom and tweaked it a bit for my likings.
2-3 Boneless Skinless Chicken Breasts, cooked and shredded or cubed
3 1/2 cups chicken broth (I use the water I cooked the chicken in)
1 can cream of chicken
1 can cream of celery
2 Tbsp Parmesan Cheese
3 1/3 cups Bisquick Mix
1 Cup Milk
Preheat oven to 425 degrees. In large bowl mix together top ingredients. Pour into a 13 x 9 inch baking dish, sprayed with non-stick spray. In separate bowl mix Bisquick and milk. Drop by the Tbsp onto top of chicken mixture. Bake for 20-25 minutes.
This feeds my family of 4 with leftovers for usually two lunches.

Faster and Cheaper than the drive-thru, Chicken & Rice
Recipe Blog #2!! YAY!
This one is one of my family's favorites and its cheap and fast! I'm sure just like us you have those evenings where you have so many things going on and very little time between that you just don't think you have time to cook anything, so the drive-thru is your only option. Well, not anymore!
You Need:
1 Can chicken, drained
1 Can Cream of chicken (or mushroom)
1 1/2 cups Minute Rice
1 1/2 cups water
In a skillet mix your water, soup and chicken until it starts to boil, reduce heat and add the rice. Cover and let cook for 5 minutes. THAT'S IT!! You can add broccoli with the rice, if you'd like or a veggie on the side and you have a fast cheap meal! This feeds my family of 4 with no leftovers, so if you are cooking for more, you might want to double it.
Most of the time the drive-thru has 10 cars and 1 person working, so you end up waiting 10 minutes for your food anyway!

Roast on Toast
I've been thinking for a couple weeks that I should start posting some of my favorite recipes. I have this green 3-ring binder that I have all my recipes in. I tease (sorta) that if there was a fire or tornado coming it's one thing I'm not leaving my house without. There are recipes in there from my home-ec class in high school and so many others that I would never be able to find again if my treasured recipe book was gone. So, if I'm posting some of those treasured recipes, maybe slowly my desire to grab that book in an emergency would fade and I would focus more on the important things, like pictures or animals or my favorite blanket, haha. I mentioned my thought of blogging my recipes to a friend and she told me "YES!" She would like some of them. So, I'm going to give it a shot.
This post I'm actually starting with something that is just in my head and not in my book 'ol recipes.....ROAST!! And an idea for a leftover roast meal. Ok, I know pretty much anyone that cooks anything, has their way of cooking their roast, but this is how I cook mine. When I buy roasts at the store the only factor for me is price/price per pound. Besides some are a little more fattier than others, I've never been able to say one cut tastes better over another cut. Also, whenever possible I buy the ones that are marked down because they are on their last day of "guaranteed freshness." When I get them home I always put them in the freezer, even if I'm cooking it the next day.
(Now, I was raised in a Southern Baptist Preacher's home and so for us roast was always a Sunday Lunch meal. It is extremely difficult for me to cook one any other time, so I'm posting as if that is when it will be devoured.)
Before I go to bed on Saturday night I pull the roast out of the freezer and put in my crock pot, filling with water until it just covers the roast. Add in season all, salt, pepper, couple dashes garlic powder, a little onion powder, 3-4 beef bouillon cubes and Worchestire Sauce to turn the water a slightly light brown color. Put the lid on and turn on the crock pot to high. (My new crock pot will only stay on high for up to six hours and then go to warm, so I have to put it on low for 10 hours and then in the morning when I get up switch it to high.) Easy enough! When I wake in the morning I will add carrots, sometimes drained canned carrots and sometimes fresh baby carrots. Put the lid back on and go to church. When we get home from church I spoon out the carrots and pull the roast out of the crock pot. I transfer them to the microwave only so they will stay warm, I don't turn it on. Your roast will be wonderfully tender and delicious every time!!!
To make the gravy, I whisk about a cup of fresh water with about 2-3 Tbsp of corn starch and 2-3 Tbsp of all purpose flour until they are well blended, but thick! You just don't want any lumps or they will transfer as lumps to the gravy and are then hard to break up. I do all this by sight and really don't measure anything, so if you need a tad more water or flour, add it. Once it is mixed well, SLOWLY whisk into the water in the crock pot (still on high). Stir and replace lid. After about 5 minutes open to see if its too thick or too thin and you can add water if its thick or make another water/corn starch/flour mixture to thicken it up. When it meets the consistency you want, your gravy is ready.
When you are finished, save your left over gravy and meat for a delicious meal #2.
Meal #2:
Take the leftover gravy and add the broken up leftover roast meat and heat. Serve over toast with veggies for a wonderful and quick mid week meal.
Don't get me wrong, I love having roast for lunch on Sunday's but having the Roast on Toast later in the week is something I look forward to everyday until it is on that day's menu!!

Update on Kimmer
Great News!!
On February 1st Kimmer started taking a new medication, Humira, to try and control her eye condition and other ailments. The other meds they have tried, her body has not responded to well. This medicine is a shot she had to do once a week, I don't know about you, but I don't like shots, so having to do one at home, to me is even worse. It was not an easy task to get the shots done. The doctor called the Rx into the speciality pharmacy and they called to verify our address and shipped it out. (This is not a med you can just pick up at your local pharmacy.) There was no explanation from the Dr on how to do it, just a booklet of pictures and instructions with the medicine. I called a nurse from our church and asked if she could help us walk through the shot, for at least the first time. We went to her house for the first dose and Kimmer was a little nervous, but we got it done without much incident. The second week, I was thinking it seems easy enough, we'd try it at home ourselves. HA! Well, just as I started the injection, Kimmer jumped and the medicine starts flying across the dining room table, needless to say, by the time I got the needle back to her skin, I don't know that much, if any, medicine made it into her system. So, week 3 we resorted to going back to have the nurse help us. It wasn't as smooth as the first time, but we got it done and all the medicine was injected. Then it was time for week #4. OH MY GOODNESS!! This one so far has been by far the worst. It took nearly 45 minutes, headphones with loud music, a pillow over her face (she did it, not us) and it still was a fight, but done. Whew!! I think its the anticipation that gets her, the shot doesn't hurt that bad, she says. The next few doses went okay, but it does take a few minutes to get her mind prepped.
After the 6th dose we went back to the opthamologist and she said Kimmer's eye was quiet!! QUIET!!! Her eye hasn't been completely quiet since this whole condition presented its ugly self in January 2012! Praise God! She could start tapering off the eye drops and start wearing her contacts again. Two days later we went back to the Rhuematologist and she said the medicine is doing exactly what they wanted it to do, so we could reduce the dose to once every two weeks! YAY! That doesn't mean that its any easier to do every two weeks, but great news just the same. Thank you Jesus!
With all that news and getting to go skiing in CO for the first time, AND getting her drivers permit, she had a wonderful spring break!
Now the count down to summer has begun......47 days......

How do you keep record of vaccinations?
Last evening after I got home from work and was starting dinner, Kenzie came in with paperwork from the school stating that all students have to have the Tdap shot before they can begin school in the fall. Kenzie was whining and complaining about having to get a shot. Trying to calm her before she went into complete panic mode when she wasn't even getting the shot right then, I told her she might already have the shot and that I would check her shot record. A bright light went off in her head and said "Wait, I have it!" and took off running to her room. Thinking that she meant she had the shot record, I was wondering why she should have it in her room. She comes running back 30 seconds later completely excited saying "I have it!!! I have it!!" with this:
This is the bandaid from when she received the shot in question in July 2011!! (She wrote it wrong on the bag) I was laughing so hard, I had no idea she had this. What adds to the humor in this is that she has SO much stuff in her room and she knew exactly where this was. I did still pull out her shot record and verify she had received the correct shot. I wonder if the school will accept this as proof of the shot? Maybe? Haha

Oh, I have a blog?
No, I really haven't forgotten I have a blog, its just I am not a good writer and so I let fear keep me from blogging. It's been over two years since I've blogged, WOW, how such much has happened in those two years! No one has probably even noticed, since I don't think anyone ever read anyway, haha.
The last time I blogged I had just started a new job, but was still working part time for my old job of 12+ years. Well very shortly after that blog, I returned to my old company in a new position. I had been waiting years for the man to retire so I could take it and he finally retired right after I had left. I knew in my heart that I was never supposed to leave that company, but I let fear, pride, selfishness, greed, and many other human qualities take me away. This time God told me to simmer down and wait on him to move me and quit trying to move myself. Ok, so I've learned that lesson. (Well, at lease in that area of my life, for now)
Dean was laid off from his job a month after I started my new position, man oh man was that a tough time. It was several months before he found a new full time job, looking back the only way we made it through was God's hand on us. He is now the General Manager for a large Fitness Center in town, don't get me wrong, I am very thankful that he has a job, however it has not been to him. Shortly after starting he had to go on blood pressure medicine and he is ALWAYS stressed. At this time he believes God has a purpose for him there, but man it's difficult for him to go to work everyday.
My beautiful Kimmer in the last 16 months has: had reconstructive jaw surgery, medically had to quit playing volleyball competitively, found to be allergic to her braces (they were eating up the inside of her mouth), two different permanent retainers that broke, another procedure to remove inflamed fluid from her jaw, has to wear a jaw splint and her removable retainer at night, found to have a rare gene HLAB27 that causes her to have and be prone to a multitude of conditions/diseases including uvieis in her eye that she has been battling for over a year now and they can not seem to get it under control, been on countless medications, received injections INTO HER EYE, started high school, got contacts only to be told she can't wear them due to the eye condition, all that and being a teenager. I'm sure I've left something out, its been a TOUGH time for her but she handles it much better than I think I would. There was a period from the last week in January 2011 until late September 2011 that she had anywhere from 1-3 appointments a week trying to get all her medical conditions under control. That was hard on her, her schooling, my work and drained our checkbook. Last week she started a new medicine and we have to give it 4-5 weeks to determine if it is helping her. I know that it could be worse, I know, however I hate to see her going through all this. She just wants to be healthy.
Kenzie, well she completed elementary school mostly a straight A student who did her homework as soon as she got it, every time. This year she is in middle school and well, homework is the last thing she does! I was really hoping that her desire to complete it immediately would carry with her forever, but no. She is at the same school Kimmer is at and her course of study is dance, so she spends depending on the day of the week between 1 & 1/2 hours to 3 hours a day dancing at school. It has really sucked some of the joy she had for dance right out of her. She's growing up so fast! She has a heart to love people, to laugh, to make people laugh and she's becoming a beautiful young lady.
**WARNING I'M STEPPING ON MY SOAP BOX** I really don't understand why people who don't enjoy teaching go into or stay in that profession! It kills me to see so many teachers at my girls school who seem to enjoy making kids terrified of them or unwilling to help them learn. I know, I know, they go to what is sometimes referred to as a college prep school, I just don't think making students scared of you, being unwilling to help them learn, or demeaning kids helps them in anyway. I understand this world isn't full of rainbows and lollipops, my girls just do not learn from these types of teachers. Every teacher that has ever fit these descriptions, both girls struggle just to maintain a C in. EVERY teacher my kids have had that helped kids learn, talked to them, worked with them, explained or taught in more than one way, or encouraged them, my girls have thrived in. IF YOU DON'T ENJOY TEACHING, PLEASE DON'T DO IT. Stepping down now.
Me, well I've gone back to school taking more accounting classes. I'm really enjoying them. I'm thinking of attending one of the working adult programs to finish my degree, the cost is outrageous!! I need some scholarships! Besides work and school, my life is full by loving on my family and serving at church.
Things you can pray for our family about: Dean - his job to be less stressful, Kimmer - healing and a heart for learning, Kenzie - to not give up, keep fighting and me - to find a way to finish my school without creating any debt for us. Finally as a family, we would still like to sell our home in this market for a price comparable to what we paid and find a community where we can settle for years to come. (I'd love if it was in Texas, but I won't push it)

Playing catch up
When I started this blog I really wanted to write in it at least weekly, I have completed failed at that. I don't even think monthly would count at this point. Oh well, I'm back for today. In my last post I shared that I had turned in my notice to my job. Well, I have left. I am still doing some part time work, some account reconciliations, for at least a couple months. For me, this is perfect. Leaving OTL was not any easier than I thought it would be. The first couple weeks of my new job I was certain I had made a huge mistake, I would cry on my way to work and on the way home. I missed my "family." I have adjusted and my new job is going well. I am learning so much everyday, I enjoy my new co-workers and the quietness of our office. I still miss my old job, and when I hear of things going on I wish I was there to enjoy it. Tonight I will get to see everyone that I miss at their annual banquet, that they still invited me to attend!
Our house is still for sale and we have not had ONE person come and look! I am still sure that selling our house was what God asked us to do, I'm just not sure what's going on. I guess we never do when we put God in charge. A couple weeks ago our realtor did a broker's open house, during the day, so we had to take our dogs to my aunts for the day. Well, they dug out of her yard, our oldest dog stayed at the house, but our younger dog, Jack, didn't. We have yet to find him. It is so strange to me that I can tell our oldest dog is so sad that her friend is gone. Not to mention how sad the girls are that he's gone. I really thought with his tags, that some one would have found him and called....nope. :(
My sister who has lived far, far away for the last four years and her husband have finally moved back to Texas!!! I'm so happy to have her close again.
Kimmer is playing club volleyball and she is doing great. It keeps us very busy, but I love to see her out of her box, when she is on the court. Our spring calendar is full of practices, games and tournaments. We have very few weekends open until May!! She wants to play school softball this spring, but I just don't know how she can fit it in with everything else she has to keep up. We'll see...
Kenzie is recovering from strep throat and a possible slight case of the flu. She went to the doctor on a Wednesday and the dr said she just had symptoms of both, no meds for her. Then FIVE days later the doctor called and said her culture came back and she did have strep. Poor girl had to fight it off all by herself. The meds did help in the end, but I felt so bad for her suffering. She is my one who has prided herself on perfect attendance the last two years. I knew she felt bad the first day when she said she didn't care if she broke her perfect attendance this year, she wanted to stay home.
I think I've about caught you up on the big things in our lives for now.

Kimmer is playing club volleyball and she is doing great. It keeps us very busy, but I love to see her out of her box, when she is on the court. Our spring calendar is full of practices, games and tournaments. We have very few weekends open until May!! She wants to play school softball this spring, but I just don't know how she can fit it in with everything else she has to keep up. We'll see...
Kenzie is recovering from strep throat and a possible slight case of the flu. She went to the doctor on a Wednesday and the dr said she just had symptoms of both, no meds for her. Then FIVE days later the doctor called and said her culture came back and she did have strep. Poor girl had to fight it off all by herself. The meds did help in the end, but I felt so bad for her suffering. She is my one who has prided herself on perfect attendance the last two years. I knew she felt bad the first day when she said she didn't care if she broke her perfect attendance this year, she wanted to stay home.
I think I've about caught you up on the big things in our lives for now.
